Broccoli (Brassica oleracea var. italica L.) is an exotic and under exploited winter season vegetable crop. And it is quietly rich in vitamin carotene, ascorbic acid, thiamin, riboflavin, niacin and iron (Thomson and Kelly, 1985; Rahman, 1988).
