Abstract

Ginger (Zingiber officinale Rosc) is an important crop. Its rhizomes is used as fresh and dried form. The aroma of ginger is pleasant and spicy and the flavour penetrating, pungent and slightly biting due to antiseptic and pungent compounds present in it that is why, it is used for manufacturing various products like ginger oil, oleoresin, ginger candy, ginger preserve or ‘murabba’, ginger pickle etc. In Ayurvedic medical system, ginger is considered to be carminative
